Our Concord grapes are full of grapes this year, and that means it's time to make our own grape jelly.

As far as I see a website posted about making strawberry jam or jelly, I rarely come across recipes for grape jelly. I can only imagine that it is due to the fact that the grapes are cooked in the middle of the vegetable garden season.


Everyone is researching, reading, and writing about how pickles, tomatoes, and peppers and love don't quite get grape harvest.


We were busy keeping our tomatoes, but it was always good to take a break from peeling and processing ketchup and salsa and making a little homemade grape jelly.


Even if you don't have your own grapes or can't find it at a farmer's market, you can still make your own jelly. As long as you can find 100% grape juice without additives and not previously frozen, a jelly-grape concentrate can be done.


However, since we have fresh grapes to choose from, we decided to use our own this year.


We like to use our jam grapes to create jelly.


I'm not trying to make this recipe in the sugar-free version. Although as long as you properly convert your sugar into an alternative sweetener, I would think it would turn out just fine.


The important thing, whether you're made with sugar or substituted, is that pectin is not required to use sugar.


The advantage of using pectin designed for recipes that do not contain added sugars is that we can use less sugar when using standard pectin. In fact, we have cut the sugar needed for this recipe in half by using Sure-Jell no added sugar pectin. 


The result - just the right amount of dessert in the grape jelly that gels up perfectly.


Not only do we make our grape jelly for spreading on sandwiches, we also use it in recipes such as meatballs and small appetizers.


But the most formidable way we use our grape jelly is a gift to family and friends. During the holidays! We like to share products from our farm and watch others. Enjoy it as much as we do!

Grape Jelly Recipe

It's easy to make a grape jelly recipe using half the sugar of a standard grape jelly recipe.


  • Serves 12 bottles

Ingredients:

  • 5 pounds of grapes or 5 cups of natural, no sugar, add grape juice.
  • 4 cups sugar
  • The box does not contain pectin sugar plus 1/4 of another box.

Instructions

  1. Wash the grapes.
  2. In a large bowl, add enough grapes to fill the bottom of the bowl. Use masher potatoes to mash grapes.
  3. Add the crushed grapes to a large non-reactive stockpot. Repeat until all the grapes are in a pot.
  4. Add enough water to the pot just until the grapes are barely covered. Bring the grapes to a boil over medium-high heat, stirring frequently. Reduce the heat and simmer for 10 minutes.
  5. Pour the mixture into a jelly strainer or in a colander lined with a cloth through a large bowl. For best results, strain the mixture overnight.
  6. In a small bowl, add the pectin and 1/2 cup of sugar and mix well.
  7. Place a metal spoon in a glass of ice water and set aside.
  8. Pour the strained grape juice into a large stockpot and add the pectin/sugar mixture over medium-high heat to cook the juices until it starts to boil.
  9. Stir in the remaining sugar and bring it back to the boiling rolling. Let it continue to boil for 1 minute and test the thickness using a cold spoon. Add a half-full teaspoon and set on a plate. When cooled at room temperature, rotate the spoon sideways. If the gel is thick to the desired consistency you can start filling the sterile mason jar out of the head area 1/4 inch if not, continue the boiling process and test until it thickens.
  10. You can freeze the jelly in a safe freezer mason jar or process in a hot tub for 5 minutes (adjust the height as needed). For a half pint bottle and a pint.
